Grilled strip loin recipe

Grilled strip loin dusted with Caribbean spices, accompanied by roasted sweet potato puree, saut√ed mushrooms, Zucchini ribbon, and red wine veal jus.

Ingredients

NY Strip 8oz

Yield: 1 portion

1tsp cinnamon

1tsp cumin

1/2tsp clove powder

3tsp sugar

Method

Yield 4 portions

Mix all ingredients together in a bowl then rub on Steaks and season with salt and Black pepper.

Mushrooms

Yield: 5 portions

1 tbsp dice button mushroom

1tsp dice onion

Ω tsp garlic

Method

Saut√ all vegetables and season with salt and pepper.

Zucchini ribbon

Slice zucchini 1/4″ thick and blanch in boiling salted water and refresh in ice bath.

When plating, make a cylinder and place saut√ mushrooms inside.

Roasted Sweet Potato Puree

Yield 4 portions

1 lb sweet potato (peeled and diced)

Roast sweet potato in a saute pan until golden, then cover with water and cook seasoning to taste.

Puree with butter and milk or heavy cream to desired consistency and season to taste.

Garnish

Pickled Red onion and fresh parsley salad
