Breadfruit Punch Grenadian Style


1 small half-ripened breadfruit

1-1/2 cups milk

1/2-1 cup sugar (to taste)

1/4 tsp. grated nutmeg

1 -2 sticks cinnamon

3-4 bay leaves

2 tsp. vanilla essence

1 tsp. Angostura bitters (optional)

1-2 tbsp. white rum (optional)

Preparation: Wash and cut the breadfruit into quarters and remove the heart and seeds. Then remove the skin with a sharp knife. Put the breadfruit in a pot with enough water to cover the pieces. Put the bay leaves and cinnamon into the pot. Steam the pieces on medium fire until they are soft.

When the pieces are soft remove them from the pot and place in a blender. Add the milk, vanilla, sugar, nutmeg and blend until mixture is smooth. The thickness of the punch depends on how much milk is used. Pour mixture into a mug. Stir in rum and bitters if desired. Chill for about two hours, then serve.

    My family used fresh coconut milk and Lasco vanilla soy, no alcohol as the children love it. Another time we used it like ice cream and persons who do not eat breadfruit enjoyed it.
